Fish

A while back I wrote a post about a wood project I did for a guy at work. I made a new spear gun for him. Payment wasn't necessary of course, but he said that he would get me a fish the next time he went out. About a week later he had a nice sized red snapper for me. It was still a whole fish so I asked him to fillet it for me. I could have tried myself but I'm pretty sure that I would screwed up a very good fish. There would have been nuggets instead of fillets. Unfortunately, my wisdom teeth extraction was the next day so we couldn't cook it right away. It would have to wait.

Yesterday I found a recipe for baked red snapper on the internet. It was a Food Network recipe. I thought it sounded good and wanted to do something really good with the fish. So this morning I made a special trip to Publix to get what I needed. It was a relatively simple recipe That I was sure I could make. The recipe was intended for use with a whole fish but the fillets were big enough that I could cut a pocket into the fillet to stuff the peppers and okra. It turned out really well and looked good to.
